These are a wonderful way to showcase rye and nixtamalized corn. If that excites you, these will not disappoint!
Cornmeal Rye Waffles
Mix together well with a whisk
2 C freshly milled cornmeal
1 C freshly milled rye flour
1/4 C cane sugar or sucanat with honey granules
2 tsp baking powder
1 tsp baking soda
Combine the following, then add to above dry ingredients and mix till just incorporated
2 C buttermilk
2 eggs
6 Tbs melted butter
Let rest about 10 mins. Heat waffle iron and lightly brush on oil. Scoop up batter (a little goes a long way) and spread with spatula across hot waffle iron. Cook till almost NO STEAM is pouring out. These will be lightly crispy and quite filling!
