Ever notice how when we eat a bowl of commercial cereal, hunger sets back in quickly? That will not be the case with this quick breakfast bake. Easy to put together with simple ingredients on hand. Make up the night before, soak in the fridge overnight, pop it in the oven when you get up! Suggested toppings below but make this your own.
3C freshly flaked oats
2 tsp baking powder
1 tsp sea salt
1 tsp cinnamon
1/2 C-3/4 C honey (alternately use 3/4 C sugar)
2 Tbs oil (I use quality Greek olive oil in all my baking, alt avocado oil)
1/2 C applesauce (alternately increase oil by 1/4 C)
2 lightly beaten eggs
1 C milk
Combine oats, baking powder, salt and cinnamon in large bowl - set aside.
Combine honey (sugar), oil, applesauce, eggs and milk. Blend together and pour over dry ingredients till all well distributed. Soak overnight in the fridge or at least an hour before baking.
Pour into greased 9 x 13 baking pan.
Bake in 350º oven about 35 mins.
Serve in desired sized pieces, topped with -
plain yogurt, honey or maple syrup drizzled over, fresh berries, chopped nuts.
