If you need a simple visual to convey the nutritional difference between whole grain wheat and what our store bought food is made from, this is it!
From The Whole Grains Council: " The chart below compares whole wheat flour to refined wheat flour and enriched wheat flour. You can see the vast difference in essential nutrients."
Also don't be fooled by "enriched." Our bodies know what to do with nutrients in their natural form. Not always the case with synthetic; for example folate (natural) vs folic acid (synthetic). Many people have been found to have MTHFR (Methylenetetrahydrofolate reductase), a folic acid processing condition which can be avoided by eating real, whole grains, per Sue Becker in an episode of her podcast, Sue's Healthy Minutes.
